Nghiên cứu này nhằm xác định các thông số sấy tối ưu cho cá nục (Decapterus maruadsi) bằng phương pháp bơm nhiệt kết hợp hồng ngoại (IR–HP). Bốn thông số công nghệ chính được khảo sát gồm nhiệt độ sấy (45–55°C), vận tốc gió (1–3 m/s), khoảng cách đèn hồng ngoại (24–36 cm) và công suất hồng ngoại (1600–2000 W), theo thiết kế thí nghiệm Taguchi L27. Các mô hình hồi quy bậc hai được xây dựng bằng phương pháp bề mặt đáp ứng (RSM), với hệ số xác định R² đạt 96.74 – 98.43% và có ý nghĩa thống kê cao (p < 0.001). Nghiên cứu đã ứng dụng phương pháp RSM để tối ưu hóa các chỉ tiêu về thời gian sấy, suất tiêu hao năng lượng riêng và tỷ lệ hút nước phục hồi, đồng thời xây dựng các mô hình dự đoán phục vụ thiết kế và tối ưu hóa hệ thống sấy IR-HP. Kết quả đã xác định chế độ sấy tối ưu tại nhiệt độ sấy là 51.77°C, vận tốc gió 2.05 m/s, khoảng cách đèn hồng ngoại là 36 cm và công suất hồng ngoại 2000 W. Ở điều kiện này, thời gian sấy là 104.16 phút, suất tiêu hao năng lượng riêng là 8.58 kWh/kg H₂O và tỷ lệ hút nước phục hồi đạt 1.81 g/g. So với các phương pháp sấy hồng ngoại và sấy bơm nhiệt, hệ thống IR–HP tại chế độ tối ưu giúp giảm thời gian sấy lần lượt 23.33% và 83.33%, đồng thời vẫn đảm bảo chất lượng cảm quan của sản phẩm. Kết quả nghiên cứu cung cấp cơ sở khoa học và thực tiễn cho việc thiết kế, tối ưu hóa và vận hành hệ thống sấy IR-HP trong chế biến thủy sản, góp phần giảm tiêu hao năng lượng, nâng cao năng suất và chất lượng sản phẩm, đồng thời tạo tiền đề cho việc ứng dụng công nghệ này ở quy mô sản xuất.

Abstract
This study aimed to determine the optimal drying parameters for Pacific mackerel (Decapterus maruadsi) using a combined heat pump and infrared drying system (IR–HP). Four key process parameters were investigated, including drying temperature (45–55°C), air velocity (1–3 m/s), infrared lamp distance (24–36 cm), and infrared power (1600–2000 W), based on a Taguchi L27 experimental design. Second-order regression models were developed using Response Surface Methodology (RSM), with coefficients of determination (R²) ranging from 96.74% to 98.43% and showing high statistical significance (p < 0.001). RSM was further applied for multi-response optimization of drying time, specific energy consumption, and rehydration ratio, while also developing predictive models for the design and optimization of the IR–HP drying system. The optimal drying conditions were determined to be 51.77°C drying temperature, 2.05 m/s air velocity, 36 cm infrared lamp distance, and 2000 W infrared power. Under these conditions, the drying time, specific energy consumption, and rehydration ratio were 104.16 min, 8.58 kWh/kg H₂O, and 1.81 g/g, respectively. Compared with conventional infrared drying and heat pump drying, the IR–HP system at optimal conditions reduced drying time by 23.33% and 83.33%, respectively, while maintaining good sensory quality. The results provide a scientific and practical basis for the design, optimization, and operation of IR–HP drying systems in seafood processing, contributing to reduced energy consumption, improved productivity, and enhanced product quality, and offering potential for industrial-scale application.
