Abstract
In this article, a part of spray drying research results to form hydrolyzed protein - chondroitin sulphate powder from shark cartilage hydrolysate by protease enzyme was presented. Our results showed that fresh shark cartilage and shark cartilage hydrolysates were rich in energy, minerals, amino acids and chondrotin sulphate. On the other hand, fresh shark cartilage and the hydrolysis solution from shark cartilage were free of heavy metals. Therefore, they were very suitable for using in food and especially functional foods. The study also determined the appropriate parameters for the spray drying process to create a protein – chondrotin sulphate powder from shark cartilage hydrolysates: a suitable carrier was maltodextrin and the suitable maltodextrin rate was 12%, drying chamber air temperature was 80ºC, suitable compressed air pressure is 2.5 bar and suitable inlet injection rate was 12 mL/min, effi ciency of collecting chondroitin sulphate and protein powder reached respectively 86.44% and 78.25%. The protein - chondroitin sulphate powder had a moisture content of 4.27%.
