Abstract
In this article, the results of optimization on the spray drying process of shark cartilage hydrolysates by protease enzyme were presented. The optimal parameters for the spray drying process to create a protein - chondrotin sulphate powder from shark cartilage hydrolysates were determined: maltodextrin rate was 12%, drying chamber air temperature was 80oC, and inlet injection rate was 12 mL/min. The spray drying process according to the above parameters created the protein - chondrotin sulphate powder with effi ciency of 87.81%. The produced protein - chondrotin sulphate powder had the total nitrogen content and chondroitin sulphate content of 50.4mg/g and 203.1 mg/g, respectively.
