Abstract
The process of extracting caffeine from coffee beans was carried out with two solvents: ethyl acetate and water with microwave assistance. Water solvents had better caffeine extraction results, caffeine extraction efficiency reached 84% after 40 minutes. Coffee beans after decaffeination (decaf coffee) were roasted, ground and sensorily evaluated. Initial results showed that decaf coffee was of good quality.
